Gluten Free Waffles & Vanilla Custard

I didn't get a crepe maker for Christmas (which ended up being okay - I learned the frying pan method), but I DID get a waffle maker.  You just can't make those delicious little squares on your own.  These turned out so crisp and wonderful,  I could have eaten them all day!  This recipe comes from Food.com, and I will be making them again!  The vanilla custard recipe comes from my family, and is a long standing tradition to eat with waffles.  Dip them in custard, or layer the waffles up with custard, jam, fresh fruit, whipped cream, whatever you desire!



Gluten Free Waffles


Ingredients

  • 1 cup brown rice flour
  • 1/2 cup potato starch
  • 1/4 cup tapioca flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup oil
  • 2 eggs 
  • 1 1/2 cups buttermilk
  • 1 teaspoon sugar

Directions

  1. Mix all ingredients together and pour into waffle iron in batches.  (Shouldn't baking always be this easy?)
  2. Top with your favourite toppings and enjoy!

Vanilla Custard

Ingredients

  • 1/3 cup sugar
  • 3 Tbsp cornstarch
  • 2 cups milk
  • 2 egg yolks
  • 2 Tbsp butter
  • vanilla
  • salt

Directions

  1. Mix sugar, cornstarch, milk, and salt together.  Cook on medium heat until thickened.
  2. Mix egg yolks, and pour a small amount of the hot milk mixture into them while whisking.
  3. Pour the eggs back into the pot of thickened milk and simmer for a few minutes
  4. Mix in butter and vanilla
  5. Enjoy over your waffles with your other favourite ingredients!
